SHIFT BREWER
The Job
Reporting to the Head Brewer, the successful applicant will be, among other key challenging aspects, responsible for:
Brewing:
· Complete overview of brewhouse and CIP’s
· Trouble shooting and setpoint adjustments
· Have full understanding of all brewery related tasks and is very competent in all aspects
· Brewing reports are kept up to date daily
· Monitoring of setpoints and quality throughout the process and reporting of information to the Head Brewer and COO
Fermentation management / Cellar Management:
· Very competent in managing fermentation setpoints, shootouts etc – daily
· Diacetyl detection at the end of fermentation
Centrifuge Filter and KZE (Pasteuriser)
· Extremely competent in all operation of clarification and stabilisation equipment
· BBT management SOP’s as well as KZE planning
· Quality Control and knows when a product is ready to be packaged based on setpoints
Packaging:
· Competent in starting the packaging lines for kegs and filling line timeously, sterile and inert, when needed
· Competent in the CIP procedures of all filling equipment
· Competent in the operation and troubleshooting of all filling equipment. Canning, Kegging and Filling Line.
Stock Take:
· Competent in monthly stock take of raw materials when needed
The Person
The ideal applicant should possess the following minimum qualifications and attributes:
· Tertiary qualification or equivalent: Engineering, or Food-Science Related
· Certification from an accredited brewing program is a plus, as is experience of production brewing
· Possess a valid driver’s license, and own transport is a must
· Forklift certification is an added advantage
· Ability to work independently, as well as part of a team
· Ability to take on various levels of responsibility from complex to simple tasks, as well as to follow written and verbal SOPs
· Hands on and practical approach to the job; logical and detail orientated
· Safety awareness and consciousness
· Ability to work shifts (which will included nights and weekends) on a scheduled roster
· Ability to lift approximately 40kgs
· Excellent communication skills
· Strong work ethic
